The famous “Aguardiente”
Aguardiente de Ojén, aniseed from Ojén or simply ojén, is a type of wine spirit, sweet and aniseed-flavoured. It is produced exclusively in Ojen in the province of Malaga.
The recipe required for its production has been changing since it began to be produced in 1830. However, traditionally ojen was made using ingredients that came solely and exclusively from the town of Ojen.
It began to be produced in the distillery founded by Pedro Morales. It was very successful, winning 28 medals, and little by little its fame spread. So the name Ojen came to be used as a generic name for quality sweet liquor.
Elaboration:
Wine made from the muscatel grape is distilled for its production. In addition, juniper wood is used which must be burned to a certain point in the production process. Aniseed branches are also used to flavour the distillation and water from the village fountain is used to reduce the alcohol content. The volume of this is stabilised at 40 degrees, although it is currently stabilised at 37.5 degrees.
Historical stages of Aguardiente de Ojén:
The history of the manufacture of this drink has gone through three different stages. They are separated by two long periods of interruption, one of 42 years between 1919 and 1961 and another of 39 years between 1974 and 2013:
- The first from 1830 to 1919: “Pedro Morales and son, Ojén, superior aguardiente”.
- The second from 1961 to 1974: “Juan Espada Fernández, Ojén, aguardiente superior”.
- And the third from 2013: “Dominique Mertens Impex. S.L., Ojén, superior liquor”
